GALION – Laura Johnson likes baking cake.

The owner of Galion’s newest bakery, Cake & Icing (at 114 Harding Way West), will offer more than 60 flavors of cakes, which can be purchased as a cupcake, typical cake or “cake in a cone.”

Johnson and her husband, John Harris opened their bakery, at 114 Harding Way W., on Wednesday, May 10.

Johnson intends to make five or six different flavors of cake daily, but encourages people to place an order if they want a certain flavor. She also makes several unique icing flavors daily; most are buttercream based.

The “in a cone” works much like an ice cream bar.

“Everybody always said my icing looked like ice cream, so I can’t sell ice cream, but I can sell icing,” she said.

People start by choosing a cake flavor, which can be placed in a cone or a cup. They then pick an icing flavor and a topping, such as sprinkles.

The bakery also sells sugar cookies, breads, tarts and fresh coffee.

“Everything is done from scratch,” said Johnson. “These are all our recipes.”

With plenty of seating, guests can stay and enjoy their snack. 

Johnson hopes to have a website and Facebook page set up soon, where she plans to post the daily flavors of cupcakes and other available baked goods.

“Right now, I’m just getting used to baking in my kitchen,” she said with a smile. “It’s only (a few days) old.”

The bakery held a ribbon cutting ceremony Friday, May 12 to celebrate its grand opening.
