MANSFIELD — What a great time to be an American consumer — the local grocers sell prepackaged, individual salmon fillets, and it’s not too expensive.

Naturally, I had to find a way to take advantage of the situation. I looked around my kitchen and found honey and soy sauce, and a sliver of ginger.

The meal is easy, and takes very little time.

Here’s what I did.

In a large skillet, heat two table spoons of olive oil.

Place the filet in the skillet after a few minuets, flip the fish to allow both sides to collect olive oil.

Dice the ginger and combine with honey and soy sauce in bowl.

Stir the bowls contents together and pour over salmon.

The fish should cook quickly, about 15 minutes.
